Turkey Enchilada Casserole

Prep time: 20 minutes
Cook time: 30-35 minutes
Yield: 6 servings
Serving size: 1/6 of recipe
Ingredients
  • ½ lb lean ground turkey
  • 1 cup onions, chopped
  • ½ tsp garlic, minced
  • 1 tsp chili powder
  • ½ tsp ground cumin
  • 15 oz can black beans, drained + rinsed
  • 10 oz can Rotel® Original Diced Tomatoes and Green Chilies, drained
  • 1 cup reduced-fat sour cream
  • ½ cup yellow corn, if canned, drain + rinse
  • ¼ cup low-fat cottage cheese
  • ¼ tsp garlic powder
  • 4 - 9" La Tortilla Factory Smart & Delicious™ Low-Carb, High Fiber Tortillas
  • 10 oz can red enchilada sauce
  • ½ cup reduced-fat, shredded cheddar cheese
Instructions
  1. Preheat oven to 350 degrees.
  2. Coat a 9 inch square baking dish with nonstick cooking spray.
  3. In a large nonstick pan, cook the ground turkey, onions, garlic, chili powder and cumin over medium-high heat until onions are tender and turkey is no longer pink.
  4. Stir in black beans and Rotel® and mix well. Remove from heat and set aside.
  5. In a small bowl, stir together sour cream, corn, cottage cheese and garlic powder.
  6. Place 2 tortillas overlapping on the bottom of pan.
  7. Top with half the turkey mixture, half the sour cream mixture and half the enchilada sauce. Repeat layers.
  8. Bake covered for 30-35 minutes until heated through.
  9. Remove from oven and sprinkle cheese evenly over the top of the casserole.
  10. Bake uncovered for about 10 minutes or until cheese is melted.
  11. Remove from oven and let sit for about 10 minutes to set.

My current eating habits

Here is a general overview of my daily routine:

Currently I am following the Weight Watchers Plus Online program eating/drinking about 42 points a day.

My daily routine starts out with a big cup of coffee with a little creamer and cane sugar which equals about 2 points depending on how much I use. Coffee is normally 0 points unless you add flavorings to them, which is amazing for this coffee addict. Then I like to eat cereal, bagels or english muffins for breakfast because they are fast and filling.

Lunch and dinner always vary. Majority of the time we cook at home, but we go out a good bit as well. Our schedules right now are all over the place because we haven't found permanent jobs yet.

I always have a lot of snacks at the apartment because that is one of my weaknesses. I have gotten into the habit of having fruits and veggies readily available so I can snack on them instead of adding more points to my day. I also have a major sweet tooth problem and love any candy or ice cream, or basically anything that involves SUGAR. I am trying to find more recipes to help with this area and not rack up the crazy points.

I have decided to post some yummy recipes as I try them and to help keep track of what I intake daily.

The start of a new begining

Today, I have decided to take a step in the right direction for my health and life. I have decided to continue to lose weight and try to become a healthier person for myself and my fiancé. I recently started Weight Watchers Online and have currently lost almost 7 pounds in the last week. Even though this is a big accomplishment, I still have a long way to go.

I am currently wanting to lose a total of 50-70 pounds before my wedding in October 2016. As many brides can attest, we all want to look beautiful on that special day. I want to look healthy for the rest of my life and on that day as well. I have decided that starting now gives me time to reach my goal in a healthy way instead of starving myself or taking those silly pills.

Many people say that it takes more than a diet to change the way you look and I am here to prove that with a diet and lifestyle change, you can accomplish that goal. Below I have posted a photo of what I currently look like and a photo of when I was at a pretty healthy weight for my body and lifestyle.
